Chinese Style Duck Burgers


  • 400 grams duck breast,
  • 2 teaspoons Chinese five spice seasoning,
  • 1 tablespoon fresh ginger — finely chopped,
  • 2 teaspoons soy sauce,
  • 1 teaspoon oyster sauce,
  • 6 spring onions/scallions — finely chopped,
  • 1 teaspoon honey,
  • sea salt & ground pepper.


Remove the skin and any sinew from the duck and cut into cubes. Mince or process – not too finely. Combine the remaining ingredients and fry about a teaspoonful to check seasoning. Adjust if necessary. Shape into two patties and chill. BBQ or chargrill until cooked to your liking
